Here is what five days in the Mexcan Cooking School.    (Starting with the first row of photos:)  discussions with chef Jon (but in this case the talk was politics rather than food).......A visit to the market in the village......  Learning how to clean and chop Nopal (cactus) leaves.......  Cutting and cleaning chilies (lots and lot of them)......  A lot of time spent by the class standing around the stove top getting tips from Estela on cooking.....

At the end of each day's class the dishes were elegantly displayed before the class sat down for lunch....

Estela and Jon have a copy of the Frida Fiestas cookbook - see photo on far right (which by coincidence we had just bought the previous week on our Frieda tour in Mexico City)........  On more than one occasion during the 5-day course Estella put her stirring spoon down in favor of dance and song (far right photo)....

The blender/mixer station (2nd photo from left) was used to turn a batch of ingredients into soup, mole, etc.

In addition to great food, there was also great scenery.  The Mexican Home Cooking school is surrounded by three volcanoes.  One dominated the view from the backyard (3rd photo from the left)  where the class sat for lunch on warm days.....

Tamales where made on the last day.   Estela and Jon made a lot of the preparations ahead of time so the class spent only a couple of hours on the project.

Here (at the far right) is a photo of Estela laying out the goodies that would later be stuffed into the tamales.

A fancy tie can be made of corn husk to decorate your tamale (and make it distinctive from the others).  In the 3rd photo from the right Ruth shows off her bow-tied tamale....

And here is Marlene with her tamale (middle photo), also nicely bow-tied......

The moon was full on the last day and a guitarist came by the hacienda  to serenade the ladies.  Here (middle two photos) the guitarist is serenading Janet.  Since his songs were in Spanish Jon was on hand  (sitting by Janet's side) to  translate word-for-word to English.....

Next, it was Ruth's turn to be serenaded.  There were two guys serenading her at once.  She had to chose between them (middle photo).  She chose Joel.
